Essex Butchers are happy to share our recipe for a delicious roasted leg of lamb!
Here’s what you’ll need:
Ingredients:
- 1 leg of lamb, bone-in (around 4-5 pounds)
- 6 cloves of garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon smoked paprika
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 tablespoon salt
- 1/2 tablespoon black pepper
- 1/4 cup olive oil
Instructions:
- Preheat your oven to 425°F (218°C).
- In a small bowl, mix together the minced garlic, rosemary, thyme, smoked paprika, cumin, coriander, salt, black pepper, and olive oil.
- Rub the spice mixture all over the leg of lamb, making sure to cover the entire surface.
- Place the lamb in a roasting pan, bone-side down.
- Roast the lamb for 15 minutes, then reduce the oven temperature to 375°F (190°C).
- Continue to roast the lamb for another 1 1/2 to 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare or 160°F (71°C) for medium.
- Once the lamb has finished cooking, remove it from the oven and let it rest for 10-15 minutes before carving.
- Serve with your favourite sides, such as roasted vegetables or mashed potatoes.
